Effectively, you play the role of a hunter. Your task is to take down progressively larger and more menacing beasts. To do that, one of the things you’ll have to get to grips with is your chosen weapon, whatever it is. Next is preparation for the hunt, mainly checking your inventory for potions and other useful items, as well as eating to gain buffs.
The fight itself is a form of a complex dance between you and the monster. The best way to go about it is to observe the monster’s attack pattern and rhythm, and to strike at opportune moments. It can be a long battle, but as long as you are patience and persistent, you can take down any monster no matter how scary they seem.
Once the monster is hunted, you’ll basically skin materials off its carcass (or wheel back the whole beast if you opted to capture it instead). Back at base, you’ll then use these materials to build better gear. Better equipment means better chances at surviving and downing monsters. The cycle then repeats.
