I use 8bitdo SN30Pro and it just rumbles on and off
Though in the moment you can't really tell unless it's a HD rumble-imperative thing
give it a try, worst case it won't rumble. But keep in mind that you're missing at least 3 buttons (counting one shoulder and the two joystick clicks) and all the switch system buttons (-, home and capture)
Mayflash GC adapter works wonders with PC though
I actually managed to do better in cuphead with a GC controller than any others I had

That seems like a fun experience. i noticed joycon rumble in dark souls is abit off so when i feel it...its weird
I liked the use that red faction guerrilla remarstered made of the rumble. You could even feel the different textures of the terrain when you were driving
if you want to play a modern game with n64 graphics you can try Yoka, i'm not sure if it's already out but they said there was an N64 filter arriving to the game for free
